The Best Creamy Bulgarian Green Salad

This is home to me and this is everything I need in a refreshing salad all summer long. If you are a lover of yogurt or dips like Tzatziki then you will love this. If you are not a lover of yogurt you can absolutely use white balsamic vinegar to taste which is what we do very often as well. When we add white balsamic vinegar to the salad my mom also loves to boil a few eggs, quarter them and add them in too. Radishes are totally optional and to taste. You will need:

Prep Time 10 mins

Ingredients

  • 7-8 Romaine leaves
  • 1-2 diced green onions — not in my video as I ran out but recommended
  • 2-3 radishes thinly sliced
  • 1/2 diced cucumber
  • 1-2 heaping tablespoons of your favourite plain yogurt
  • drizzle of olive oil
  • salt to taste

Instructions

  • Wash and pat dry the romaine lettuce. Stack each leaf on top of each other in the same direction. Roll them tightly— just like a cigar and begin to thinly slice your lettuce starting from the stem. The thinner the better.
  • Once you are done if the strands are too long I like to run my knife across 2-3 times to make them shorter.
  • Cut your cucumber in half and those halves in half again and dice it thinly as well.
  • Wash and thinly slice the radishes as well or leave them out if you don’t like radishes in the salad.
  • I didn’t have any green onion but I highly recommend you add it in if you have it on hand. Add everything to a bowl and mix it with salt, yogurt and olive oil. Enjoy

Notes

There is no exact recipe for the salad, everything in here is to taste. Some people love more yogurt others like less. Please feel free to add as much of everything as you like.
