You can leave out the mini eggs and make them into a traditional chocolate chip cookie or add them on top as a fun activity and treat which would be perfect for Easter this year. Ingredients
- ½ cup butter softened
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- 1 medium egg
- 1 tsp. pure vanilla extract
- 1 cup flour + 2 tablespoons
- ½ tsp. baking soda
- ½ cup dark chocolate chips
- Cadbury Mini Eggs Candy
Instructions
- Heat oven to 375°F. Beat the first 5 ingredients in large bowl with a stand or hand-held mixer until light and fluffy. Add flour and baking soda, mix well.
- Stir in the chocolate chips and with a tablespoon or a mini ice cream scooper, scoop the dough 2 inches apart onto a baking sheet.
- Press 3 Cadbury Mini Eggs into dough for each cookieS Bake for 10 to 12 minutes or until lightly browned.
- Cool on the baking sheet for 2-3 minutes, remove them onto a wired rack and cool completely. Enjoy
Notes
This recipe is adapted from my collaboration with Cadbury so feel free to adjust the ingredients and measurements. You are more than welcome to use semi-sweet chocolate chips, white chocolate-chips, walnuts, or anything else you desire. You can definitely use coconut sugar instead of brown sugar or even reduce the sugar a bit as well if they are too sweet to your liking.
