Iced Coffee with Vanilla Syrup

The tastiest iced coffee with 3 ingredient vanilla simple syrup. I am a lover of iced coffee but let’s be honest, $5-10 a day is just not realistic for most people. It is so easy and affordable to make your own at home and the coffee can be chilled the day before. The simple syrup can also be made ahead of time but you will have to heat it again as it solidifies when cold. This is the easiest most delicious recipe.

Iced coffee with vanilla syrup



  • 1/3 cup water
  • 1/3 cup sugar
  • 1 teaspoon pure vanilla extract
  • lots of ice
  • brewed coffee that’s cold and refrigerated


  • On the stove on medium-high stir your water + sugar until it’s like a syrup. Take it off the heat and stir in the vanilla. Let it cool a touch so that it doesn’t melt your ice.
  • Add lots of ice to a coffee cup, as much simple syrup as you like, any coffee that you brewed and chilled + a touch of any favourite creamer. Stir and enjoy.


You can store your simple syrup in the fridge because it makes more than you will need but it will solidify. When you want to use it again you have to reheat it on the stove. All simple syrup is equal parts water to sugar as you stir for 5-7 minutes until it thickens and becomes like “syrup”.
I have been told it’s amazing with sweetened condensed milk instead of cream and simple syrup so give it a try too.
